A Great Week for Cheese

Cheese is definitely top of mind this week as we look forward to the Vermont Cheesemakers Festival. This is the first year Must Be The Milk is participating in the Festival, and we couldn’t be more excited! The Festival recently earned a coveted spot on Fodor’s annual Top 10 Summer Food Festivals and offers a chance for guests to meet 40 award-winning cheesemakers and enjoy offerings from local wineries, breweries, distilleries, and artisan food producers. Must Be The Milk is also offering an early morning dairy farm tour prior to the start of the Festival this year. (If you would like to join us, please share a comment at the end of the post!) The best part of the Festival is the opportunity to meet the hard-working people who make cheese. We got a preview when we went to Enosburg Falls, Vermont to meet the owners of Boston Post Dairy. You can meet them at the Festival, but here’s a sneak peek!

The Boston Post Dairy in Enosburg Falls, Vermont

                The Boston Post Dairy is owned and operated by Robert and Gisele Gervais and their four daughters Anne, Theresa, Susan, and Annette. Upon purchasing the Boston Post Dairy, the family added a cheese-making facility and a small retail store where they sell cheese, maple syrup, and bakery items made onsite. The cheese-making facility includes viewing windows to allow visitors to watch the cheese making process.

             After our tour of the facility, we were lucky enough to enjoy a cheese tasting. What a delicious opportunity! It is no wonder Boston Post Dairy has taken home several awards from the American Cheese Society!

The four sisters who own Boston Post Dairy

Although Boston Post Dairy officially opened in 2007, the dairy business is in the genes of its owners. The owners of Boston Post Dairy grew up on a dairy farm. The Gervais family owns a large farm property in Enosburg Falls, Vermont. Robert and Gisele Gervais, along with their family of 15 children, have been farming since 1962.

GISELE (named after our Mom!)

Aged 3 months, flavor intensifies as it ages.

Swiss style finished with a Spiced Apple Cider wash. Melts well.

Pairs well with Sparkling wines, Merlot, Pears, grapes

 

Bon Père (named for our Dad! French for Good Father)

Aged 3-5 months, flavor intensifies as it ages. Creamy, mild, melts very well.

Pairs well with Pale Ales, Smoky Beer, & sweet berries

St. Vincent (patron Saint of wine)

Hard cheese, aged 3 –6 months, flavor intensifies as it ages.

Wine washed rind. Leans toward a sharp cheese
